- 2 avocado
- 3/4 cup water
- 3/4 cup white vinegar
- 1 tsp red chili flakes
- 2 garlic pods
- 2.5 tbsp monkfruit sweetener
- 2.5 tsp salt

Cut the avocado in half and remove the pit. Peel and slice them into 4-6 slices.In a pint jar add sliced avocados, garlic pods, and red chili flakes. 2 avocado, 1 tsp red chili flakes, 2 garlic pods
In a saucepan add water, vinegar, salt, monk fruit and give a nice boil or until the monk fruit is dissolved.

Once the brine is boiled, add it to the jar filled with avocado slices. Store in the fridge after pickle is at room temperature
