Ingredients
 
 

  • 1 cucumber I use English cucumber, but any cucumber will work
  • 250 gram Greek yogurt using low-fat Greek yogurt approx 1 cup
  • 1 tbsp lemon juice
  • 1 garlic 1 garlic pod
  • 1/4 cup cilantro or any other herb like dill, parsley or mint
  • 1/2 tsp salt

Instructions
 

  • This is a no-cook soup recipe. Just add cucumber, Greek yogurt, lemon juice, garlic clove, cilantro, and salt to the blender. Blend till smooth and creamy consistency.
  • Garnish it with chopped cherry tomatoes, cucumber, and chopped onion. Serve immediately or chill in the refrigerator for 30 minutes before serving. You will love this chilled cold cucumber soup with greek yogurt.

Notes

Tips 
  • Do not add ice cubes while blending the ingredients. It will dilute the consistency.
  • If you like it to make a little spicy then add 1 jalapeno and then blend.
