The original French Nicoise Salad Recipe must contain anchovies. But I used a special ingredient in my dressing to give a briny, salty marine flavor even though it's completely vegetarian.

Green beans Hard-boiled eggs Cooked white beans Romaine lettuce Cherry tomatoes Olives Roasted red bell peppers Nicoise salad dressing
Put the white beans into a mixing bowl and add one third of the dressing. Toss together to coat evenly and add to one side of the serving platter.
Put the romaine lettuce in the same bowl and add another third of the dressing. Toss together, then put next to the beans.
Add tomatoes, red peppers, and green beans to the platter. Drizzle over the last of the dressing and top with black olives and hard boiled eggs.
I use salt-packed capers to substitute anchovies and give a nice briny, salty marine flavor to the French salad!
