    • Tofu- Extra-firm Silken tofu is used to prepare the scramble. It is silky and soft in texture. It provides the real egg like texture. There is no need to drain the water, just gently pat with the kitchen towel before adding it to the seasoning.
    • Black salt- It is the secret ingredient for this recipe. If you want to have eggy vegan scramble then use black salt, it provides a egg like flavor profile and there is no need to add nutritional yeast. Do not forget to use black salt in place of normal salt.
    • Turmeric gives a nice yellow color to this vegan egg scamble that resembles to actual egg scramble. Do not overdo it else it may spoil the overall flavor profile.
    • Cilantro is a fresh herb that just enhance the overall flavors with tofu. However if you do not like it either completely eliminate it or just use parsley. You can check more cilantro substitutes here.
    • Onion powder- It is used for enhancing the flavors. You can use chopped onion as well.

    • Add vegetables- You can add a variety of seasonal veggies to add more texture. Fresh or frozen both type of vegetables works for the recipe.
    • Different tofu- You can try the firm and extra firm tofu to make this easy vegan scramble. I have used firm tofu to make curry tofu scramble. Other firm or extra firm tofus gives a bit dry scramble but still taste great.
    • Beans- Beans or chickpeas are other addition to add in the scramble while cooking. It will simply increase the nutritions.
    • Oil-free- To make it oil-free use a well seasoned cast iron skillet or a non stick cookware. OR simply skip the oil and use water for the same amount of oil.
    • Nutritional yeast- Add 1 tablespoon nutritional yeast to the final recipe if required. It gives nutty, savory, cheese like flavors.
    • Cheese- Add vegan cheese shreds to make the cheesy vegan scramble.

    How To Make Silken Tofu Scramble

    Let see how to make a vegan egg scramble with silken tofu in under 15 minutes.

    First of all, heat oil in a nonstick pan on medium heat. To this add silken tofu and break it into small pieces with the help of a spatula. Cook it with oil for 3-4 minutes.

    After 4 minutes add onion powder, black salt, and turmeric. Combine everything nicely and keep breaking the big pieces into smaller pieces. The silken tofu should be combined with seasoning uniformly and the overall mixture should look like egg scamble.

    Garnish with chopped cilantro and serve immediately with crusty bread and roasted vegetables.

    Tips & FAQ's

    • If you prefer not to use cilantro just replace with your favourite herb and just omit it.
    • If no black salt then feel free to use normal salt.
    • You can also add little garlic powder for more flavors.
    Which is the best tofu to make scramble?

    Which tofu to use for scramble depends on the availability or personal choice. Silken tofu yields a silky soft and egg scramble-like texture. Also, you do not need to wait for draining water. Use firm or extra firm tofu for a firmer texture.

    Can you scramble silken tofu like eggs?

    Silken tofu is very soft in texture and does not require to drain water. While making scramble it gets mushy with a gentle press of spatula and looks like an egg. So yes silken tofu gets scrambled just like eggs easily.

    How to eat silken tofu scramble depends on the time you are planning to eat.

    • Serve with avocado and bread toast in breakfast.

    Any leftover scramble is good to store in the fridge for 3-5 days easily. Just transfer the leftovers to a container and refrigerate them. When required you can microwave it for 1 minute or heat it on the stovetop.

    Can I freeze silken tofu scramble? Yes, you can freeze. Portion it in freezer-friendly bags and store in the freezer for 2-3 months. Once required just transfer the bag to the fridge overnight and reheat as mentioned.

    • 12 oz Silken Tofu 1 pack
    • ¼ teaspoon Turmeric
    • ½ teaspoon Black salt kala namak
    • ¼ teaspoon Onion powder optional
    • 2 teaspoon olive oil
    • 2 tablespoon Cilantro chopped cilantro for garnishing, optional

    Instructions
