Slice avocados. Cut avocados in half and remove the pit. Peel and slice into 4-6 pieces.
Prepare the prickling brine. In a saucepan, add water, vinegar, salt, monk fruit, and give it a nice boil.
Make pickle and store in the fridge. Add the prickling brine to a jar filled with avocado slices, garlic pods, and red chili flakes. Cool down and shake well.
Don't use ripe avocados because they will dissolve in the prickling brine. Use underripe and firm avocados for this recipe.
Store avocados in the fridge after every use. They are good for 1-2 weeks before they start turning brown.
