Substitutes:

Step 1

Brine solution for pickled onions. In a saucepan add water, vinegar, salt, monk fruit, and dissolve over medium heat.

Pickle the red onions. Fill the jar with sliced onions, chili flakes, and garlic cloves. Pour the brine mixture over and press onions with the fork to burst any air bubbles.

Store in the fridge. Once cool down, close the lid and shake it well. Wait for at least 30 minutes before serving, but keeping it in the fridge for a few hours works great!

How long do pickled onions last?

Once the brine is at room temperature close the mason jar and store the pickled red onions in the fridge. This stays fresh for up to 2-3 weeks easily.
