What is cucumber soup made of? This Cold Cucumber Soup is similar to the Gazpacho recipe, but without bread. It's simply a combination of Greek yogurt and English cucumber, blended together with herbs and garnished further.

Add cucumber, Greek yogurt, lemon juice, garlic clove, cilantro, and salt to the blender.

Step 2

Blend till smooth and creamy consistency.

Step 3

Garnish it with chopped cherry tomatoes, cucumber, and chopped onion. Chill in the refrigerator for 30 minutes before serving.

Quick Tips:

– Do not add ice cubes while blending the ingredients. It will dilute the consistency. – If you like it to make a little spicy then add 1 jalapeno and then blend.
