Soups are normally knowns as warm and hot soups served in winters. But this cold soup is basically made with raw vegetables and served cold or chilled on summer days. One another cold soup is called Gazpacho.

It is similar to the Gazpacho recipe, but traditional gazpacho adds bread while blending, and here in this recipe we are simply blending everything without bread.

This chilled cucumber soup is a combination of Greek yogurt and English cucumber. Blended together with herbs and garnished further.

  • Cucumber– I use English cucumber most of the time in my recipes. It is sweet, firm, and has fewer seeds. Persian cucumber is also good in place of it.
  • Greek yogurt– Using low-fat Greek yogurt to make sure that cucumber soup is low in calories and fits in my macros. However, you can use full-fat Greek yogurt to make low-calorie and keto-friendly chilled cucumber soup.
  • Lemon juice– It just adds a bit of citrus flavor if yogurt is sweet.
  • Garlic– I love adding garlic for flavors.
  • Herb– Using cilantro here as that was my available herb at the time of making. But feel free to use Dill, parsley, mint instead of cilantro.
  • Salt & pepper
  • Garnishing– Chopped cherry tomatoes, cucumber, red onions, and cilantro are used for garnishing it further.

Step by step instructions

This is a no-cook soup recipe. Just add cucumber, Greek yogurt, lemon juice, garlic clove, cilantro, and salt to the blender. Blend till smooth and creamy consistency. (pic 1-2)

  • Do not add ice cubes while blending the ingredients. It will dilute the consistency.
  • If you like it to make a little spicy then add 1 jalapeno and then blend.

Garlic bread or any crusty bread goes well this this cold soup. kababs or grilled vegetables are other recipes to serve with it.

Serving & storing

Serve it in afternoon snack time, after school snack time, as a side dish or appetizer. Combine with a slice of toasted bread to make a meal during lunch or dinner.

  • 1 cucumber I use English cucumber, but any cucumber will work
  • 250 gram Greek yogurt using low-fat Greek yogurt approx 1 cup
  • 1 tbsp lemon juice
  • 1 garlic 1 garlic pod
  • 1/4 cup cilantro or any other herb like dill, parsley or mint
  • 1/2 tsp salt
