Roasted Asparagus With Pico De Gallo

Air fryer roasted asparagus with pico de gallo makes a perfect side dish for dinner or lunch. This fresh asparagus is loaded with flavors, tender, crisp, and completely oil-free.

You just need fresh asparagus and basic ingredients like tomato, onion, garlic, lemon, salt, and green chili to make salsa.

Variation

  • Garlic powder, red chili flakes, or everything bagel seasoning goes very well to season it.

Step by step instructions

Trim the ends

First of all, clean and wash the asparagus (pic 1). Trim of the woody part, it is fibrous and very chewy. Either bend them from where the woody part starts and snap quickly or just cut them with a sharp knife (pic 2-4).

Season & cook

Preheat the air fryer, the default temp in my air fryer (Gourmia) is 400F. Once preheated, place the cleaned asparagus in the basket and sprinkle some salt. Just give it a quick stir and fry it for 12 mins.

You can toss it in 1 tsp olive oil at this step if required.

Flip them once after 6 mins. (pic 5-8)

1 lb asparagus is enough to place in the basket and roast nicely.

Make fresh salsa & serve

In the meantime prepare chunky tomato salsa by mixing all the ingredients listed in the recipe card.

Tips & FAQ’s

How long to cook asparagus in air fryer?

10-12 minutes is good to cook in air fryer. In this duration asparagus are golden color and still firm enough. Soft but not mushy. This recipe is cooked at 400F for 12 minutes.

Serving & storing

Roasted asparagus is BEST to pair with just any dish be it vegetarian or non-vegetarian. Serve them on weeknight dinner as sides or in meal preparation or enjoy as a snack anytime.

For vegetarians, I love to serve them with TVP Scramble, Sheet Pan Eggs For Sandwiches, Zucchini Curry, and Curry Tofu Scramble.

You can store them in an air-tight container for 2-3 days. To reheat just microwave them for a minute and they are ready to eat.

To make fresh pico de gallo

  • 1 cup tomato finely chopped, I use roma tomatoes. You can use any tomato here.
  • 1/4 cup onion finely chopped, I use red onion.
  • 1 tbsp garlic finely chopped
  • 1 tsp serrano finely chopped
  • 1 tbsp lemon juice freshly squeezed
  • 1/4 tsp salt
